Typically, guests have mainstream appetites, so we recommend an average of 1/3rd pound of meat per person and 7oz of sides per person. Volumes of food needed for groups with larger or smaller appetites are determined by our consultation call. We recommend balancing the volume of each menu item, based on the popularity of the menu choices you select, i.e. 10lbs meat = 6lbs Brisket, and 4lbs Pulled Pork, etc.
